Malt flours are produced by milling grains of malted cereals. As with non-malted flours they can be produced to various degrees of refinement. Light coloured malt flours offer varying degrees of alpha amylase, protein and malt flavours. Coloured and dark malt flours are principally used for flavour, texture improvement and appearance enhancement in all areas of the food industry.

We manufacture an extensive range of branded malt flours. In addition, we are also able to develop bespoke products to meet individual customer specifications and requirements.

Ask about our blends and mixes - we are able to blend flours and flakes together with seeds and other ingredients to make concentrates that are sure to add some interesting variations in your baking.
 
  Light Malt Flours

Muntons range of light malt flours, produced from both barley and wheat, are milled at different extraction levels. They offer a complete range of malty flavours and diastatic activity.
   
  Rich Cream
  A white medium diastatic wheat malt flour particularly suited to producing lightly malted rolls or scones. Typical inclusion rate 3% flour weight.

   
  SRW
  A white high diastatic wheat malt flour which, in low concentrations, increases the diastatic level in bread flours. Typical inclusion rate 1-2% flour weight.

   
  Superfine
  A very fine white barley malt flour of high diastatic activity, to enhance crumb structure and texture. Typical inclusion rate 1-3% flour weight.

   
  Diax
  A very high diastatic white barley malt flour, used in the production of sticky malt bread, dinner rolls and Vienna bread. Typical inclusion rate up to 1% flour weight.

   
  SRB
  A white barley malt flour with high diastatic activity, excellent at generally improving bread. Typical inclusion rate 1-2% flour weight.

   
   
  Muntons Roasted Malt Flours

Our range of roasted malt flours provide a wide choice of colours and flavours. As natural ingredients they provide acceptable characteristics for the enhancement of bread, biscuits and other baked products.
   
   
  Caramalt
  A very light brown barley malt flour with minimal diastatic activity to add a hint of malty flavour and improve crust colour in brown breads and rolls. Typical inclusion rate 1-2% flour weight.

   
  Nut Brown
  A light brown barley malt flour with negligible diastatic activity for applications in the production of wholemeal breads and biscuits. Typical inclusion rate up to 2% flour weight.

   
  XD 200/400
  Naturally coloured non-diastatic crystal barley malt flours. Used for flavour enhancement in brown breads and with the added benefit of some aroma and added natural colour. Typical inclusion rate 1% flour weight.

  Dark Malt Flour
  A very dark non-diastatic roasted barley malt flour used as a natural colouring for brown breads. Typical inclusion rate 0.5% flour weight.

   
  RBM
 

Extremely dark non-diastatic roasted barley malt flour. Typical inclusion rate less than 0.5% flour weight.

  Malted Wheat Flakes
 

Malted Wheat Flakes are produced by the steaming and delicate rolling of malted wheat grains, before being dried on a fluid bed dryer. This method of drying ensures the uniformity of colour and flavour of the malted cereal is carried through into the final flake.

When used in specialist breads, Malted Wheat Flakes can be used as a bread topping or as an integral part of the dough, at an inclusion rate of up to 25% of flour weight. Muntons Malted Wheat Flakes contribute a characteristic and traditional malty flavour to baked goods, breakfast cereals and confectionery.

In addition Malted Wheat Flakes offer the user several benefits:-

  • a natural fibre source
  • a provider of texture
  • a natural colouring medium

The colour and thickness of Muntons Malted Wheat Flakes can be varied to meet individual customer requirements

Muntons Malted Wheat Flakes are packed in polythene-lined paper sacks of 25 kg, or alternatively IBC bags.

   
  Nuttimalt
 

Muntons Nuttimalt is quite simply one of the tastiest grain products around and has been a firm favourite of both bakers and their customers world-wide.

Unlike our other malted ingredients, Nuttimalt is a kibbled wheat grain which is cut rather than milled. This particular process retains all of the goodness of the malted wheat grain. Consumers passion for health food is a growing market place and it seems that Nuttimalt will only continue to go from strength to strength. Both you and your customers can benefit from both the satisfying taste and excellent texture when you feature Nuttimalt in your bread and rolls.

   
  Nuttimalt Gold
  With the benefits of longer kilning, Nuttimalt Gold offers the characteristics of Nuttimalt but with an increased malty flavour and a reduced amylase activity.

   
   
 

Blends & Mixes

In our milling programme we have the facility to blend our malt flours, and to add other ingredients according to our customers' requirements. Provided our minimum production quantities can be met, we are pleased to consider any requests for blends of malt flours.
