Food Types: Flakes

Our flaked malts are made by gently steaming and delicately rolling malted grains, then drying the softened grains on a fluid bed dryer to ensure that a uniform colour and flavour is carried through into the final flake. Malted flakes can be used in a wide variety of applications, bringing additional texture, extra natural colour and beneficial fibre to the final product. When used in specialist breads, Malted Wheat Flakes for example make an ideal bread topping or, at levels as high as 25% of the dough weight, can be used as an integral part of the loaf structure introducing a rich indulgent taste and feel to the bread.
